Slow Cooker Sunday Baked Potato Soup

For Slow Cooker Sunday this week we had a family favorite- baked potato soup. We’ve tried many potato soup recipes over the years and this is one of the best. Best part is you don’t actually have to “bake” the potatoes saving time and your fingertips from having to peel off hot potato skins. Serve this up with a big green salad (may I suggest spinach?) and you have yourself a belly-filling, mostly healthy meal.

Slow Cooker {Sunday} Baked Potato Soup

  • 1 large onions
  • 3 TB butter
  • 2 TB flour
  • 2 cups water (divided 1 cup/1cup)
  • 4 cups chicken broth
  • 2 medium baking potatoes, peeled and diced
  • 1½ cups mashed potato flakes
  • ½ lb sliced bacon cooked & crumbled
  • ¾ tsp pepper
  • ½ tsp salt
  • ½ dried basil
  • ⅛ tsp dried thyme
  • 1 cup half & half
  • ½ cup shredded cheddar cheese
  • 2 green onions, sliced
  1. In a large skillet, saute onions in butter until tender.
  2. Add flour and gradually stir in 1 cup of water.
  3. Bring to a boil.
  4. Cook and stir until thickened (about 2 minutes)
  5. Transfer to slow cooker.
  6. Add the broth, potatoes, potato flakes, bacon, pepper, slat, basil, thyme and 1 cup water.
  7. Cover and cook on low for 4-6 hours until potatoes are tender.
  8. Stir in cream and heat through.
  9. Garnish with cheese and green onions.

  1. With the high winds and rain of Hurricane Sandy in the background the bowl of soup looks pretty good. I can almost taste it. Do you think that is an important reason for being on the road in this storm to get the ingredients ?
