In the Spring & Summer months we tend to do all our easy meals on the grill… easy prep, clean-up and delicious taste. But Fall has arrived & with it returns one of our other favorite family cooking traditions- Slow Cooker Sunday. Basically we take a break from the grill and bring the ease indoors. It seems we are always coming across delicious sounding recipes that involve the slow cooker so what better way to make sure we actually try them by setting aside a day every week just for that. There’s also nothing better than knowing dinner is taken care of early on in the day. It’s a much more relaxed approach to dinner time {and the food ain’t half-bad either}.

Our first meal of the season is a recurring favorite that I originally found on allrecipes.com, Slow Cooker Chicken and Dumplings. Like many recipes on that site there are a plethora of suggestions on variations of this recipe. I made it exactly as the recipe called for this time but for caloric reasons I may cut down the biscuits next time. Don’t tell my kids that though, I’m pretty sure that’s their favorite part.

Slow Cooker Sunday- Chicken and Dumplings

Ingredients
  • 4 skinless, boneless chicken breast halves
  • 2TB butter
  • 2 (10.75 oz) cans condensed cream of chicken soup
  • 2 (10 oz) packages refrigerated biscuit dough, torn into pieces
Instructions
  1. Place the chicken, butter, soup and onion in a slow cooker and fill with enough water to cover.
  2. Cover and cook for 5-6 hours on high. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

 

I am happy to have Slow Cooker Sunday back. It adds an ease, predictably and comfort that is a welcome change for the dark and cold months ahead. And I already have next weeks recipe in mind which puts me one step ahead for meal planning. I’ll be back with that recipe next Sunday :)
