Weekly Menu~ May 6-11

This week I consulted with my oldest son, Zachary, to help plan this week’s menu. I don’t know why I don’t do this more often because it seem like when they feel like they helped come up with the ideas they are much more receptive to eating what is served that night. I know that seems like a no-brainer but like I said, I don’t do it often enough. I’m going to work on changing that. In the meantime, here’s what we came up with for this week…


Leftovers- nothing fancy, just an open the refrigerator and find something you want to eat. There’s A LOT in there right now and it will clear the way for grocery shopping tomorrow.


Black Bean Enchiladas - The recipe I posted from a couple of weeks ago made two pans so I’ve already got them in the freezer ready to cook.


Swedish Meatballs served over spaetzle, spinach salad


Chick-fil-a (Zac has a gift card he wants to use)


Mother’s Day dinner out with my Mom

Saturday: (game night)

Roast Beef Sandwiches, onion rings, baby carrots

Sunday: (Mother’s Day)

Manco & Manco’s pizza – a mother’s day tradition


I am looking forward to an easy week in the kitchen thanks to Zac.  I guess I’ll count that as an early Mother’s Day present :)
